Raspberry Gelato

It's so good to be back! For my back-to-normal homecoming, I'm bringing you the EASIEST dessert I have ever made. I'm serious. It's not mine; it belongs to Jules over at Stone Soup. I just have to share the love.

I actually Wikipedia'd sorbet and gelato and sherbet to see what category this sucker really falls under, and I think it does indeed belong in Realm Gelato. But whatever you call it, it's AWESOME. And now that we've entered the month of April with all of the sunshine and cookouts, this will be your saving grace.

Raspberry Gelato

  • a 12ish-oz. bag of frozen raspberries
  • 1/3 cup of sugar (start with less and add if you worried about it being too sweet)
  • 1/2 cup of heavy cream

Whir them all together in a food processor or blender until it's completely smooth. THAT'S. IT. And this feeds 4-6 people, depending how you interpret "portion size."

Depending on how frozen your berries are, you might have to whir a bit longer, but you can serve it immediately if you'd like. Or just pour the bright pink awesomeness into a container and throw it in the freezer for a couple of hours. It'll last a couple of weeks I think, but mine didn't even come close to making it that long. And if you're adventurous, experiment with other fruits! The bigger the fruit, the longer it'll take (assuming they're frozen fruits). And if you'd like something a little less fattening, feel free to try plain yogurt instead of the cream. I haven't tried it, but I can't imagine it'd be bad.

This looks like a mag. pic! YUM - we love raspberries and are hoping for a bunch from our bushes this year. Our goat ate down my plants last year - ugh, so hopefully, we'll get more than cereal "candy" this year. I LOVE this raspberry recipe.

Yumm....This really makes me miss my trip to Italy when I was in college. I had no idea it was so simple to make. Thanks for sharing!!

Oh my heck, Kendra - I cannot WAIT to try this with my mom's fresh raspberries this summer. I'll for sure give it a whirl with fruit you get in a bag from the grocery store, but this is MOTIVATION to get out late the summer & early fall and pick berries like crazy. We grow a mean huckleberry in this neck of the woods. Oy. I'm salivating already.

Oh boy, gelato! The desert of choice in our home. Hahah! We first discovered it in DC about 4 years ago and have been searching for decent gelato place ever since. Maybe that place will have to be my kitchen. Although, there was one store in Palm Beach that was amazing, but driving 3 hours one way would not be prudent in this economy. LOL!

Actually, since you made this with cream, it's ice cream. Gelato is made with whole milk, which is why it has a lower fat content and has more flavor than creaminess.

I tried it with frozen mangos as well as raspberries, and I have to say, though the raspberry was delish, the mango was totally awesome and had a better texture according to the friends who tried it. In fact, I liked it so much, I made another double batch of mango this weekend to use up the rest of my whipping cream. I almost feel healthy eating it! :)
