Strawberry French Toast

For the rest of you, my apologies. I know that now you're regretting the stale Pop-Tart and cold coffee you just had for breakfast. No worries, friends. Make this for dinner.
French toast is one of those foods that is so simple to make but always seems to be reserved for holidays. Let's stop that trend, shall we? This is simple enough to make virtually any day of the week, and the flavoring possibilities are endless. Today, we're doing a sweet French toast with strawberry topping, but you can do whatever you want. Next time, I'm going to use cocoa powder and make chocolate French toast. Yeah. Lots of drooling over here.
Strawberry French Toast
Serves two or a very hungry me one
Strawberry Topping:
- 1 cup of frozen or fresh strawberries (fresh ones can be sliced)
- 1/4 cup of water
- 1 tbsp. sugar
- a pinch of salt
French Toast:
- two big slices of stale white bread (brioche is awesome if you have it)
- two eggs
- 1/4 cup or so of milk, half-and-half, or cream
- a pinch of salt
- a spoonful or so of sugar
- a sprinkle of cinnamon and/or ground ginger
- 1 tbsp. or so of butter
- powdered sugar (optional)
Ready? Here we go.
For the strawberries, put everything (berries, water, sugar, and salt) in a small saucepan over medium heat. All you have to do is stir it every few minutes. It'll bubble and break down and get all syrupy and concentrated and lovely. It'll take about 15-20 minutes total... just the right amount of time to cook the French toast. Seriously. That's it.
For the French toast, grab a shallow dish (a pie plate or casserole dish), and whisk together the eggs, milk, salt, sugar, cinnamon, and ginger.
Meanwhile, heat up a skillet or griddle (cast iron is best if you have it) over medium heat. Melt a pat of butter in the pan. Pleeeease use butter. It makes all the difference. Dip a slice of bread in the egg mixture for a couple of seconds, flip it, and then put it in the pan. Don't soak the bread too long or it'll get really soggy. Gross. Cook the bread for about four minutes on each side until it's crispy and brown. When it's time for the second slice, add another pat of butter to the pan and cook. (You can keep slices warm in a low oven if you're cooking a big batch.)
Now put a spoonful of strawberry topping on the first slice, top it with the second slice, and drench the whole thing in the remaining strawberries. And just because it's how I always ate French toast as a kid, I like to sprinkle it with powdered sugar.
