The Easiest Roast Chicken

If you haven't been able to tell yet, I like meals that fit in a bowl.

    

This, however, is something that does not fit in one bowl, BUT it is cooked in one pan. HA. I win. This is one of the easiest meals you can ever make. It looks way harder than it is, but trust me when I say that you can do this and it'll be delicious. Have I steered you wrong yet? Wait, don't answer that. Just cook the chicken.

Roast Chicken with Vegetables

  • two carrots, peeled and cut into big chunks
  • two red potatoes, cut into big chunks
  • one medium onion cut into chunks
  • two chicken breasts with the skin and the bone
  • two sprigs of fresh rosemary, chopped

If you're serving more than two people, double or triple the number of vegetables, and feel free to use the whole cut-up chicken rather than just the white meat. Cooking time is the same.

In a big roasting pan or casserole dish, toss your chunked vegetables with a few drizzles of extra virgin olive oil, a few pinches of salt, a few cracks of pepper, and half of the rosemary.

 

Now place the chicken SKIN SIDE DOWN in the pan. Drizzle the bottom of the chicken with olive oil, and season with salt, pepper, and rosemary. Now turn the chicken with the skin side up, and oil and season that side as well. Easy enough so far, right?

Now put the pan in a preheated 400 degree oven for an hour. Rock. It. Out. That's it!!! The chicken should be done by then (you can use a thermometer or cut into it a bit if you're freaking out), but unless you have Aunt Bea's oven, an hour should be perfect.

This looks delicious! I actually have all the ingredients at home, but can you just use boneless skinless chicken breast? and if so, do you still cook it for an hour? and do you cook it uncovered the whole time? Help help! This might be dinner tonight! :)

YUM! We l.o.v.e. roast chicken around our house. So healthy and SO easy. And - bonus! - always impresses a crowd. We love to do ours with some lemon in the cavity to keep the bird moist...or if I'm going for a really savory effect, I put some goat cheese and rosemary under the skin. But really, is anyone surprised I just said "goat cheese"?

I made this for dinner last night for my picky husband and son. It got rave reviews!! And SO easy to make. My husband's only "complaint" was that I hadn't put in enough veggies - that is easily fixed for next time . . . and there WILL be a next time. I made this for my husband last night. He ate the entire thing except what I was able to grab! I used four red potatoes and three large carrots. I also used an herb mix I got from Williams & Sonoma and that put it over the top! Thanks for sharing.
