My Favorite Sandwich

Blog Widget by LinkWithin

When I was a kid and made my own lunch (I was independent), my go-to was bologna and cheese with mayo on white. Aren't we glad that a kid's arteries are resilient? Now, my arteries need a bit more care, and my tastebuds are way more demanding. When I need a quick lunch, this sandwich is my best friend. We're old buddies, not needing to say much to enjoy each other's company. Doesn't everyone love a friend like that? Judge if you'd like that mine is in sandwich form.

  • a good grainy bread
  • avocado
  • bacon
  • tomato
  • salt and pepper

Doesn't that combo just make your mouth shoot off fireworks?! Me, too. Spread the avocado on both sides of the bread, top with a few slices of ripe tomato, season with salt and pepper, and finish with a couple of bacon slices. Crunchy, creamy, fresh, flavorful, not to mention good for you. It's perfect.

I would omit the tomato, cause I just don't like the texture, but I would love a bacon and avocado sandwich! Yum.

Oh, and we made the chicken thigh wraps the other night (in a pan, not on the grill) and they are still so yummy.

I love sandwiches like that! My typical sandwich is mayo, s&p, tomato, cucumber, spinach, and bacon (or roast beef). If avocados were cheaper I would definitely add those too! Yummy!

The idea of those flavors together make me salivate. A nice twist on a classic BLT. Only I'd throw on some spinach leaves for a little more umph - and because they're always in my fridge!! Yum.

Kendra, I just recently found your site and love your approach to food and cooking. Thank you for encouraging all of us to just get in the kitchen and have fun. This sandwich was one of my biggest cravings during both of my pregnancies. Yum, yum!
