Ten-Minute Chickpea Salad

Yes, I said ten minutes. Fresh, brightly flavored, and really tasty.

  • one small-ish red onion, diced
  • 2 cups of frozen spinach, thawed and drained
  • half a can of quartered artichokes (in water), drained, and roughly chopped
  • one can of rinsed and drained chickpeas or garbanzo beans (same thing, different name)
  • the zest of one lemon and maybe even a squeeze of the juice
  • a few drizzles of extra virgin olive oil
  • 1/4 cup or so of feta cheese
  • a spoonful of pesto (or fresh basil if you have it)
  • a good handful of fresh flat-leaf/Italian parsley
  • salt and pepper

Heat a medium skillet over medium-low heat and add a drizzle of extra virgin olive oil. Add the onion, season with salt and pepper, and cook for a couple of minutes, stirring once or twice.

Add the spinach, season, and cook another minute or two.

Add the artichokes, season, and cook long enough to rinse and drain the beans.

Add the beans, season, and cook about two minutes to gently warm the beans.

Add the lemon zest, feta cheese, pesto, parsley, another drizzle of olive oil, and another pinch of salt and even some crushed red pepper flake if you'd like some heat. Turn off the heat, stir together, and serve.

This was my lunch with a piece of crusty bread, and as a main dish, it can serve three to four people. You can also have it as a side with grilled chicken or fish, or bulk it up for dinner with a side salad and pita bread. It can be served room temperature if you'd like, so it's great on picnics or if you're brown-bagging it at work.

Tasty, healthy, easy, quick... am I not taking good care of you?

Chickpeas are what hummus is made from, yes? I like hummus... so I'm thinking I would like chickpeas? I'm always nervous with new things, ever since I bad experience I had with some freaky hard olives. This really does look and sound delicious, though...

Ah, here's another great idea for what to do with the leftover chickpeas I made last night...though I'm worried cooking them again might make them tough. This looks delicious, though, and kudos on such a pretty site design!

Made it this morning for breakfast with my leftover chick peas and had it with bread---DELIC! This is such a quick, easy recipe, but it looks like it took lots of work when you're finished with it. Great recipe!
