Easy Meat Sauce Pt.2
January 14, 2009 My mom, the fabulous stained glass artist who designed THIS glorious thing that now hangs in my kitchen, asked me a question in the comments on Monday that I thought I should answer here. Her question?
What are some other ways to use the meat sauce? Thanks for asking, Mom! I'll tell you! And the rest of you. No pictures since they're just ideas, but you can use your imaginations.
- Use just the meat and veggies (no tomatoes or spices) as a burrito filling. Add lettuce, sour cream, salsa, rice, black beans, or whatever you want.
- Add just a couple of spoonfuls of canned tomatoes (no spices) to the meat and veggies, and use it as enchilada filling. Place the rolls in a casserole dish, top with some salsa (thinned out with a little water if it's chunky), sprinkle with cheese, and bake at 375 for 30 minutes or so.
- Want Tex-Mex meat sauce? Instead of oregano and basil, use my Tex-Mex spice mix, a pack of taco seasoning, or your favorite combination of chili powder and cumin. Put a twist on spaghetti!
- Make the meat sauce in a stock pot instead of a skillet. Add some water or chicken stock to make it more the consistency of soup, and make an Italian chili with white beans and a small pasta like orzo. Just cook the pasta on its own and add it to the soup. Simmer it for a bit and maybe add some extra herbs if you'd like.
- Simply spoon on top of polenta and grate Parmesan cheese on top.

That same little birdie sent me over here and I'm so glad she did! I love your idea with the meat sauce over polenta! So simple, but probably so delicious. I'll have to try that next time I have extra sauce! Now off to find that chocolate chip cookie recipe I heard about....
Curious- do you find yourself trying new recipes instead of using tried and true ones? I just can't help myself these days...I'm always trying something new! Sometimes that's a good thing...and other times it's not!

And....I already know I'm just going to love visiting....my mom is also a stained glass artist extraordinaire I have many pieces in my house....AND....I just made meat sauce the other night, very similar to your recipe, with leftovers sitting patiently in my freezer. I'm glad to have your ideas for reinventing those leftovers....will you do more posts on a meal + leftover ideas....I am terrible at creative re-interpretation.

I think I may actually cook a meal today! Your recipes are fabulous! Your marshmallows look divine! Just talked about big marshmallows on my blog this morning! We need to make these right away! p.s. I use leftover meat sauce as pizza sauce on a purchased crust. Just add cheese and any other desired toppings for a quick, yummy meal!
