Easy-as-Pie Key Lime Pie

I have no idea where I got this recipe, but I've made it so many times for so many people with oohs and aahs and can-I-have-this-recipe responses every single time. Try it!!

Key lime pie is creamy like pumpkin pie but tart and summery. A lot of recipes use real key limes instead of regular ones, but for this and for me, it doesn't make much difference. Besides, it's cheaper, and I'm all about saving money! And these are pictures with my new camera!! Woot woot!!

These measurements are for two pies, but TRUST ME... you'll want to make two. Every single time we've made a pie for guests or family, we've ended up making another one since Kaz and I didn't get enough. We like food. And we like this pie.

 

Key Lime Pie

  • two store-bought graham cracker crusts
  • eight egg yolks
  • two cans of sweetened condensed milk
  • eight limes, zested and juiced (remember to zest before you juice)

Whisk everything together. Pour it into the crust. Bake it at 325 degrees for 15 minutes. Let it cool to room temperature, chill it in the fridge for four hours or so, and serve it with whipped cream if you want. That's it!

That looks tasty and I'm not even a fan of citrus stuff!

I used your buttery hot dog bun idea for some sausages I made the other night, and OMG! They were delicious! I normally make them because my boyfriend likes them and I usually just eat half of one or so, but I had a whole one for dinner and then another one for lunch the next day. I don't think I will be able to eat anything in a hot dog bun again without it being cooked in butter!

i found an easy key lime pie recipe this summer and made it like 3 times! mine uses the condensed milk, but a can of frozen limeade. but i'm gonna have to try this one to compare recipes. i love having good but quick solutions!! i mean, who doesn't!!!

Wow! Are those pics with the new camera??
I didn't end up renting a chick flick. I ended up lazily lounging around the house all day, took a nap, read a book, and watched too much tv. I got caught up on some Project Runway. However, friday we rented Baby Mama and I thought it was fabulous!

Kendra...key lime pie is my absolute favorite dessert, being that I'm from
Charleston and all it just has to be. I can't wait to try your recipe and I'm super jealous of your new camera, mine's broken you know, so sad, I snap pics all day long with my imaginary camera, snap, snap. Stop. The. World. these pies are that good! I couldn't wait 4 hours for them to chill in the fridge. I had to have a slice. Yummy. And they aren't so sweet that your teeth hurt like some other key lime pies I've had. My husband was very impressed. Thanks!
